Definition
Cocoa refers to processed cacao beans, especially roasted cocoa powder and cocoa mass, the ingredients that give chocolate its deep, familiar flavor.
Cocoa is the name for cacao beans once they have been fermented, roasted and processed, most often referring to cocoa powder and cocoa mass (also called cocoa liquor, though it contains no alcohol). In everyday shopping, "cocoa" is the ingredient-side word, while "cacao" usually points to the plant and the bean.
The main cocoa products
- Cocoa mass (liquor) — roasted nibs ground into a smooth, bitter paste. It is roughly half fat and forms the backbone of dark and milk chocolate.
- Cocoa butter — the pale fat pressed out of cocoa mass. It gives chocolate its melt and is the only cacao ingredient in white chocolate.
- Cocoa powder — the dry cake left after pressing, ground fine. It is used in baking, drinks and coatings.
Natural vs. Dutch-process cocoa
Natural cocoa powder is acidic, lighter in color and fruity-sharp. Dutch-process (alkalized) cocoa is treated to lower its acidity, which makes it darker, smoother and milder. Bakers care about the difference because acidity affects how recipes rise; chocolate lovers notice it as a rounder, mellower taste.
Why cocoa matters when you choose a bar
How much cocoa mass a chocolate contains shapes its intensity. More cocoa mass means a darker color, more bitterness and a firmer snap; less cocoa mass and more sugar or milk means a sweeter, creamier bar. That balance is what separates dark chocolate from milk chocolate.

Frequently asked questions
Does cocoa liquor contain alcohol?
No. Cocoa liquor is simply another name for cocoa mass, the smooth paste made by grinding roasted cacao nibs. It is not an alcoholic ingredient.
