Definition
Triterpenes are natural compounds found in plants and some mushrooms, such as reishi and chaga, that give them a bitter taste and dissolve best in alcohol.
Triterpenes are a large family of natural compounds built from six linked units of a small molecule called isoprene, giving them a 30-carbon backbone. They occur widely in plants, and in fungi they are especially associated with woody species such as reishi and chaga. In many cases they are responsible for a mushroom's bitter flavor.
Where triterpenes show up
- Reishi: contains dozens of related triterpenes known as ganoderic acids, a major reason reishi tea tastes so bitter.
- Chaga: contains inotodiol and draws betulin and betulinic acid from the birch trees it grows on.
- Plants: triterpenes and their relatives are found in olives, apple peels, licorice root, ginseng and many herbs.
Why they matter for extraction
Triterpenes dissolve poorly in water but much better in alcohol. That is why a water-only hot-water extraction captures mainly polysaccharides like beta-glucans, while an alcohol step is added in dual extraction to capture triterpenes as well. When you see "dual extracted" on a reishi or chaga product, this is usually the reason.
Research and tradition
Mushroom triterpenes have been the subject of laboratory research for decades, particularly in Japan, China and Korea. Traditional practice, meanwhile, used them the old-fashioned way, in long-simmered teas and alcohol-based tinctures. Research is ongoing, and findings differ by species and preparation.
