Couverture Chocolate

Couverture chocolate is professional-grade chocolate made with a larger share of cocoa butter than ordinary eating or baking chocolate. That extra fat makes it flow smoothly when melted, so chocolatiers use it for tempering, dipping, enrobing and molding thin, glossy shells. The word comes from the French couvrir, "to cover."

What makes chocolate "couverture"

In the European Union, dark couverture must contain at least 35% total dry cocoa solids, including at least 31% cocoa butter. The US has no separate legal category, so in America the word is a trade term used by suppliers and pastry chefs. In practice, couverture has three signature traits:

• Fluidity — it coats thinly and evenly instead of forming thick, clumpy layers.
• Shine and snap — once tempered, it sets with a bright gloss and a crisp snap.
• Clean melt — cocoa butter gives it a smooth mouthfeel without waxy fats.

Couverture vs. compound coating

Cheaper "compound" or "candy melt" coatings swap some or all of the cocoa butter for other vegetable fats. They are easy to use because they do not need tempering, but they tend to taste waxier and melt less cleanly. If a coating never needs tempering, it is probably not couverture.

Why it matters to you

You will rarely see "couverture" on a candy bar wrapper, but you can feel the difference: a glossy surface, a clean break and a smooth, fast melt all point to chocolate with plenty of cocoa butter.
