Definition
Mouthfeel is how a food physically feels as you eat it. In chocolate, it covers smoothness, melt speed, creaminess and any grit or waxiness.
Mouthfeel is the physical sensation of food in your mouth, separate from its taste or aroma. With chocolate, mouthfeel describes how smooth or gritty it is, how quickly and evenly it melts, how creamy or dry it feels, and whether it leaves a clean or waxy finish.
What shapes chocolate's mouthfeel
- Particle size — cocoa and sugar particles are ground very fine, typically to around 20–30 microns, below what your tongue can detect as grit. Coarser grinding feels sandy.
- Conching — long mixing and aerating rounds off particles and coats them in fat for a silky feel.
- Fat type — cocoa butter melts just below body temperature, giving a clean melt. Substitute fats can feel waxy or leave a coating.
- Milk fat — adds creaminess and a softer, faster melt in milk and white chocolate.
- Temper — well-tempered chocolate melts evenly; bloomed chocolate can feel crumbly or chalky.
How to taste for mouthfeel
Place a small piece on your tongue and let it melt without chewing. Notice how fast it softens, whether it coats your mouth smoothly, and how the finish feels once it is gone. Then compare with a second style. You will start noticing differences you never paid attention to before.
Mouthfeel beyond chocolate
Gummies have mouthfeel too. Gummies set with pectin have a tender, short bite that breaks cleanly, while gelatin gummies are bouncier and more elastic.
