Single-Origin Chocolate

Definition

Single-origin chocolate is made with cacao beans from one country, region or farm, so it shows the distinct flavors of that particular place.

Single-origin chocolate is chocolate made from cacao beans grown in one defined place, whether that is a country (such as Ecuador or Madagascar), a region, or a single farm or estate. The goal is to let the character of those beans come through, much like wine made from one vineyard.

Why origin changes flavor

Cacao flavor is shaped by genetics, soil, climate and, most of all, how the beans are fermented and dried after harvest. As a result, beans from different places can taste remarkably different. Tasters often describe some origins as bright and red-fruity, others as nutty and chocolatey, and others as earthy or floral. These are general tendencies, and each maker's roasting and conching choices shift the result.

Single-origin vs. blends

  • Single-origin — distinctive and sometimes surprising; flavor can vary from harvest to harvest.
  • Blends — beans from several origins combined for a consistent, balanced "house" flavor year after year. Many large chocolate producers and chocolatiers rely on blends for this reason.

Neither is better; single-origin is about exploration, blends are about reliability.

How to read a single-origin label

Look for the origin, the cacao percentage, and sometimes the harvest year or farm. Keep in mind that "single-origin" is a marketing term without a strict legal definition, so a label naming a whole country is less specific than one naming an estate.
