  • Air, light and odors — fats slowly oxidize and chocolate absorbs smells, dulling flavor.
  • Ingredients — dark chocolate generally keeps longest; milk and white chocolate contain milk fat that ages sooner; creamy fillings and nuts shorten shelf life further.
